Composition: 100% Sangiovese.

Wine making process and refinement: traditional cement tank of; in January after the fermentation malolattica, is set for the refinement in the barrels of French oak (barriques) from 225 liters, where it remains for about 16 months up to bottling.

Total acidity (express in tartaric acid): 5.70 g/ls..

Alcoholevel: 13.80% vol.

Color: red purple very intense, with reflexen.

Scent: persistent.

Taste: balanced in the component tanniches and in the acidity, fit for a long aging in bottle.

Vino Chianti Classico D.O.C.G.

Varietes: 90% Sangiovese, 10% Cabernet and Merlot.

Maturing and wine-making: after the racking time ( usually on November) the wine was put in oak barrels ( barriques ) where remain for the fining process for 16 months about; then, goes in the bottles and continues to refine in bottle.

Total acidity
(expressed in tartaric acid): 5.60 g/l..

Alcohol level:
13% vol.
Color: dark red, with maroon reflexen.

Perfume:
powerful, full of flowers, and also
lightly leather.

Taste: soft, velvet, round.

Number of bottles: n.15.000, 75 cl.

White Wine

Varietes:
80%Trebbiano, 20% Chardonnay.

Maturing and wine-making:
in steel tanks.

Color:
clear yellow with greenish tints.

Gradazione alcolica:
12% vol.

Gusto:
lightly dry.

Perfume:
persistent with flower and fruits flavours (mint, acacia, honey, broom).

Number of bottles:
n.2000, 75 cl.

Vinsanto Malvasia

Varietes: 70% Malvasia, 30% Trebbiano.

Maturing and wine-making: after the harvest of the best grapes we put to dry up in one room; pressing the dried berries 1 month later, the wine racks into “caratello” (barrels of chestnut for 50 liters) with cement bung; here the wine stay for a period of 3 years in a place where the alterations of the seasons allow for the evolution of taste and scents and flavours typically of the “vinsanto”.

Alkohol level: 15% vol.

Color: yellow amber, with golden tints.

Taste: sweetly dry, lightly alcoholic;

Number of bottles: n° 700, 0.50 cl.

Grappa di Chianti Classico

Raw material: Fresh fermented and dripping first grape pressings for the Chianti Classico.

Distillation process: continuous with vakuum-still.

Appearance: clear and cristalline.

Aroma: strong, dry and presistent.

Flavour: warm and soft.

Alcohol level: 45% vol.
